Verser sur le chocolat au lait. Verser au fond de la verrine.<\/p>\n\n\n\n<p><strong>Mi-cuit chocolat<\/strong><\/p>\n\n\n\n<p>125 g de chocolat 70%<\/p>\n\n\n\n<p>115 g de beurre<\/p>\n\n\n\n<p>150 g de sucre<\/p>\n\n\n\n<p>4 oeufs<\/p>\n\n\n\n<p>50 g de farine<\/p>\n\n\n\n<p>Faire fondre chocolat et beurre. M\u00e9langer sucre et oeuf et incorporer premier m\u00e9lange. Ajouter d\u00e9licatement la farine. Cuire dans h\u00e9misph\u00e8re 8 min \u00e0 160\u00b0C.<\/p>\n\n\n\n<p>Poser \u00e0 l&rsquo;envers sur la gel\u00e9e.<\/p>\n\n\n\n<p><strong>Emulsion grue de cacao<\/strong> (la veille)<\/p>\n\n\n\n<p>150 g de lait entier<\/p>\n\n\n\n<p>300 g de cr\u00e8me<\/p>\n\n\n\n<p>60 g de sucre <\/p>\n\n\n\n<p>120 g de jaunes d&rsquo;oeuf<\/p>\n\n\n\n<p>50 g de gru\u00e9<\/p>\n\n\n\n<p>6 g de g\u00e9latine<\/p>\n\n\n\n<p>Infuser le gr\u00e9 dans le lait et compl\u00e9ter apr\u00e8s sur 150 g. R\u00e9aliser une cr\u00e8me anglaise, ajouter g\u00e9latine et au frais. Mixer.<\/p>\n\n\n\n<p>Rosace autour du micuit.<\/p>\n\n\n\n<p><strong>Chantilly mascarpone chocolat<\/strong><\/p>\n\n\n\n<p>150 g de cr\u00e8me liquide<\/p>\n\n\n\n<p>75 g de mascarpone<\/p>\n\n\n\n<p>30 g de sucre<\/p>\n\n\n\n<p>100 g de chocolat 70%, (ou 10% p\u00e2te pistache)<\/p>\n\n\n\n<p>Monter la chantilly puis incorporer le chocolat \u00e0 40\u00b0C.<\/p>\n\n\n\n<p><strong>Emulsion mangue<\/strong><\/p>\n\n\n\n<p>200 g de pur\u00e9e de mangue<\/p>\n\n\n\n<p>100 g de cr\u00e8me liquide <\/p>\n\n\n\n<p>15 g de sucre<\/p>\n\n\n\n<p>2 jaunes d&rsquo;oeuf<\/p>\n\n\n\n<p>2 g de g\u00e9latine<\/p>\n\n\n\n<p>R\u00e9aliser une cr\u00e8me anglaise avec la creme les oeufs et le sucre.
