Recette Alsacienne.<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n\n\n\n<p>500 g de farine T45<\/p>\n\n\n\n<p>65 g de sucre<\/p>\n\n\n\n<p>10 g de miel<\/p>\n\n\n\n<p>10 g de sel<\/p>\n\n\n\n<p>20 g de levure fraiche<\/p>\n\n\n\n<p>100 g d&rsquo;oeufs \u00e0 temp\u00e9rature ambiante<\/p>\n\n\n\n<p>150 g de lait temp\u00e9r\u00e9<\/p>\n\n\n\n<p>150 g de beurre temp\u00e9r\u00e9 <\/p>\n\n\n\n<p><strong>Progression :<\/strong><\/p>\n\n\n\n<p>P\u00e9trir tous les ingr\u00e9dients sans le beurre pendant 3 min en premi\u00e8re vitesse, puis 12 min en deuxi\u00e8me vitesse. La p\u00e2te doit \u00eatre lisse et brillante.<\/p>\n\n\n\n<p>Ajouter le beurre et p\u00e9trir au moins 15 min en deuxi\u00e8me, jusqu&rsquo;\u00e0 la p\u00e2te d\u00e9colle compl\u00e8tement de la cuve.<\/p>\n\n\n\n<p>Pointage : Couvrir et laisser pousser une heure dans un endroit temp\u00e9r\u00e9.<\/p>\n\n\n\n<p>Rabattre et mettre sous film au frigo au moins pour 2 h.<\/p>\n\n\n\n<p>Peser des parts de 70 g et bouler.
