Excellent pour moi avec un grand cru de Cuba de 70%.<\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<p>300 g chocolat noir 70%<\/p>\n<p>15 cl de cr\u00e8me liquide enti\u00e8re<\/p>\n<p>3 jaunes d\u2019\u0153uf (50 g)<\/p>\n<p>6 \u00e0 7 blancs d\u2019\u0153uf (200 g)<\/p>\n<p>50\u00a0g de sucre semoule<\/p>\n<p><strong>Progression :<\/strong><\/p>\n<p>Faire fondre le chocolat.<\/p>\n<p>Porter la cr\u00e8me \u00e0 \u00e9bullition. Verser la cr\u00e8me en trois fois sur le chocolat en remuant avec la maryse pour faire une \u00e9mulsion bien \u00e9lastique et brillante.
