{"id":308,"date":"2015-01-12T18:49:23","date_gmt":"2015-01-12T18:49:23","guid":{"rendered":"http:\/\/ottmarkick.fr\/cuisine\/?p=308"},"modified":"2015-01-12T19:04:38","modified_gmt":"2015-01-12T19:04:38","slug":"creme-potage-asperge-verte-tartare-de-st-jacques-juste-raidi","status":"publish","type":"post","link":"https:\/\/ottmarkick.fr\/cuisine\/creme-potage-asperge-verte-tartare-de-st-jacques-juste-raidi\/","title":{"rendered":"Cr\u00eame \/ potage asperge verte \/ Tartare de St. Jacques juste raidi"},"content":{"rendered":"<p>Recette \u00a0pour 4 personnes, cours de cuisine Christophe Le Fur \u00e0 Mur de Bretagne.<\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<p>40 g de beurre<\/p>\n<p>500 g d&rsquo;asperges vertes<\/p>\n<p>200 g de cr\u00eame liquide<\/p>\n<p>12 noix de St. Jacques<\/p>\n<p>1\/2 botte de ciboulette<\/p>\n<p>30 g de beurre<\/p>\n<p>40 g de farine<\/p>\n<p>850 g de lait<\/p>\n<p>poivre de sichuan, fleur de sel, piment d&rsquo;espelette<\/p>\n<p><strong>Progression :<\/strong><\/p>\n<p>Faire une <a title=\"B\u00e9chamel classique\" href=\"https:\/\/ottmarkick.fr\/cuisine\/?p=305\">bechamel<\/a>\u00a0avec le beurre la farine et le lait.<\/p>\n<p>Couper les asperges en tron\u00e7ons de 3 cm.<\/p>\n<p>Blanchir les asperges 2 min dans l&rsquo;eau sal\u00e9 (30g sel\/l) et stopper cuisson dans eau glac\u00e9.<\/p>\n<p>Faire suer les asperges dans le beurre puis cuire dans la b\u00e9chamel pour 10 \u00e0 12 min \u00e0 petit feu, mixer et passer au tamis.<\/p>\n<p>Hacher les coquilles, assaisonner avec\u00a0, fleur de sel, piment d&rsquo;espelette et ciboulette et tasser dans un cercle poser au milieu d&rsquo;une assiette creuse.
