{"id":69,"date":"2015-04-02T10:08:22","date_gmt":"2015-04-02T10:08:22","guid":{"rendered":"http:\/\/ottmarkick.fr\/cuisine\/?p=69"},"modified":"2021-05-21T17:45:58","modified_gmt":"2021-05-21T15:45:58","slug":"macarons-recette-de-base","status":"publish","type":"post","link":"https:\/\/ottmarkick.fr\/cuisine\/macarons-recette-de-base\/","title":{"rendered":"Macarons &#8211; Recette de base"},"content":{"rendered":"<p>La recette de base pr\u00e9f\u00e9r\u00e9e de mes filles est de <strong>Vincent Guerlais<\/strong>, plus consistante que celle de Pierre Herm\u00e9.<\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<p>205 g sucre glace<\/p>\n<p>205 g poudre d&rsquo;amande<\/p>\n<p>160 g\u00a0sucre<\/p>\n<p>37 g eau<\/p>\n<p>72 g blanc d\u2019\u0153ufs (mont\u00e9s)<\/p>\n<p>60g blanc d\u2019\u0153ufs (liquide)<\/p>\n<hr \/>\n<p>Pour les macarons chocolat ajouter 25 g de poudre de cacao dans la poudre d&rsquo;amande et 5 g de blanc d\u2019\u0153ufs (liquide).<\/p>\n<hr \/>\n<p>Sortir les blancs d\u2019\u0153ufs au moins une heure avant du frigo.<\/p>\n<p>Tamiser la poudre d&rsquo;amande et le sucre glace et bien m\u00e9langer.<\/p>\n<p>Cuire sucre et eau \u00e0 118\u00b0C et verser sur les blancs mont\u00e9s. Continuer \u00e0 battre \u00e0 vitesse moyenne pendant 5 min pour refroidir cette meringue \u00e0 l&rsquo;italienne.<\/p>\n<p>Verser dessus les blancs liquides puis le m\u00e9lange sucre glace\/poudre d&rsquo;amandes et macaronner, pour obtenir un appareil lisse et brillant.<\/p>\n<p>Coucher des petits ronds sur papier cuisson avec une douille 8 ou 10. Tapoter la plaque par le dessous pour faire dispara\u00eetre des \u00e9ventuelles pointes de chapeau.<\/p>\n<p>Laisser cro\u00fbter au moins 30 min.<\/p>\n<hr \/>\n<p><strong>Cuisson :<\/strong> Four ventil\u00e9 150\u00b0C \u00a0pendant 10 \u00e0 12 min.
