Important de travailler dans un local froid ou avec des ingr\u00e9dients froids, sinon la p\u00e2te chauffe trop pendant le petrissage.<\/p>\n<p><strong>Ingr\u00e9dients :\u00a0<\/strong><\/p>\n<p>500 g Farine courante type 55 ou farine de gruau<\/p>\n<p>300 g oeufs (bien frais)<\/p>\n<p>9 g de sel<\/p>\n<p>65\u00a0g de sucre<\/p>\n<p>18\u00a0g de levure<\/p>\n<p>250 g de beurre<\/p>\n<p><strong>Progression :<\/strong><\/p>\n<p>Petrir sans le beurre 5 min en premi\u00e8re vitesse puis 20 min en deuxi\u00e8me vitesse.
