Alle Zutaten ausser dem Vorteig 3 Minuten langsam verkneten. Dann den Vorteig in St\u00fccke zugeben und alles 8 Minuten auf 2. Stufe zu einem elastischen Teig verarbeiten.<\/p>\n<p>2 Stunden Gehzeit, dabei nach 1 Stunde einmal falten.<\/p>\n<p>Teigling zu 80 g abstechen und in Zylinder formen.<\/p>\n<p>10 Minuten Teiglingsruhe.<\/p>\n<p>Dann ca. 70\u00a0cm lange Str\u00e4nge rollen, die im Zentrum dick sind und nach au\u00dfen hin immer d\u00fcnner werden.<\/p>\n<p>Die Str\u00e4nge zu Bretzeln formen und 12-18 Stunden im K\u00fchlschrank aufbewahren.<\/p>\n<p>30 Minuten im Tiefk\u00fchlfach anfrieren und anschlie\u00dfend in kurz in Natronlauge tauchen (Schutzma\u00dfnahmen beachten!).<\/p>\n<p>Die Brezeln im unteren dicken Bereich einschneiden und salzen.
