Pour cela le placer dans un bol et le couvrir de\u00a0film alimentaire pour \u00e9viter les projections \u00e0 l&rsquo;int\u00e9rieur du four.<\/p>\n<div class=\"etape mod3  zoomable\">\n<div class=\"instruction\">\n<p>Ajouter d\u00e9licatement le chocolat noirdans le beurre \u00e0 50\u00b0C (tr\u00e8s important que le beurre soit chaud).<\/p>\n<p>Laisser asseoir les pistoles dans le beurre chaud pendant quelques instants, avant de remuer d\u00e9licatement au fouet\u00a0comme si c&rsquo;\u00e9tait une \u00e9mulsion. Le beurre doit \u00eatre chaud pour permettre au chocolat noir\u00a0de fondre lors du m\u00e9lange.\u00a0Lorsque le chocolat noir est bien fondu, le m\u00e9lange est\u00a0entre 30 et 35\u00b0C.<\/p>\n<p><span class=\"pageref-terme hover-popup\" data-id=\"terme-blanchir2\">Blanchir<\/span> (mousser) les oeufs avec le sucre\u00a0au fouet pendant 2 minutes.<\/p>\n<div class=\"etape mod2 mod5  zoomable\">\n<div class=\"instruction\">\n<p>Verser les \u0153ufs sur le m\u00e9lange chocolat\u00e9\u00a0en remuant au fouet.<\/p>\n<div class=\"etape  zoomable\">\n<div class=\"instruction\">\n<p>Tamiser la farine sur le m\u00e9lange\u00a0et finaliser le m\u00e9lange en incorporant d\u00e9licatement la farine par un mouvement de rotation.<\/p>\n<div class=\"etape mod2 mod3 mod6 mod9  zoomable\">\n<div class=\"instruction\">\n<p>R\u00e9partir la pr\u00e9paration dans un cercle de 22 cm\u00a0\u00a0sur une \u00e9paisseur de 1 cm environ.<\/p>\n<\/div>\n<\/div>\n<div class=\"etape-clear mod2 mod3 mod6 mod9 \">\u00a0Cuisson \u00e0 four ventil\u00e9 pr\u00e9chauff\u00e9 \u00e0 160\u00b0C pendant 15 \u00e0 16 minutes.
