{"id":904,"date":"2017-12-09T18:50:14","date_gmt":"2017-12-09T17:50:14","guid":{"rendered":"http:\/\/ottmarkick.fr\/cuisine\/?p=904"},"modified":"2017-12-09T18:55:33","modified_gmt":"2017-12-09T17:55:33","slug":"terrine-de-st-jacques-aux-champignons-sauvages-vinaigrette-gourmande-de-christophe-le-fur","status":"publish","type":"post","link":"https:\/\/ottmarkick.fr\/cuisine\/terrine-de-st-jacques-aux-champignons-sauvages-vinaigrette-gourmande-de-christophe-le-fur\/","title":{"rendered":"Terrine de St. Jacques aux champignons sauvages, vinaigrette gourmande de Christophe Le Fur"},"content":{"rendered":"<p>Pour 4 personnes<\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<p>150 g de noix se St. Jacques + 2 noix coup\u00e9es en gros cube<\/p>\n<p>150 g de cr\u00e8me fleurette<\/p>\n<p>1 blanc d&rsquo;oeuf<\/p>\n<p>1 carotte<\/p>\n<p>100 g de champignons sauvages<\/p>\n<p>ciboulette<\/p>\n<p>&#8230;.. pour la vinaigrette :<\/p>\n<p>1 c\u00e0s de vinaigre balsamique<\/p>\n<p>2 c\u00e0s de l&rsquo;huile d&rsquo;olive<\/p>\n<p>2 cas de l&rsquo;huile de noix\/noisettes<\/p>\n<p>persil plat<\/p>\n<p>30 g de fruits \u00e0 coques<\/p>\n<p><strong>Progression:<\/strong><\/p>\n<p>Couper la carotte en brunoise et blanchir.<\/p>\n<p>Po\u00ealer les champignons \u00e0 feu vif.<\/p>\n<p>Mixer les 150 g de St. Jacques avec une pointe de sel, ajouter le blanc d&rsquo;oeuf , mixer puis ajouter la cr\u00e8me et mixer \u00e0 vitesse rapide pour bien monter et \u00e9mulsionner cette farce.<\/p>\n<p>Incorporer la carotte, les champignons la ciboulette et les morceaux de St. Jacques \u00e0 la spatule.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 160\u00b0C.<\/p>\n<p>Beurrer des moules et garnir.<\/p>\n<p>Poser un papier sulfuris\u00e9 au fond d&rsquo;un plat \u00e0 r\u00f4tir servant de bain marie avant d&rsquo;y poser \u00a0les moules.
